How did montanious topography affect the following civilizations?
Just a wild guess off the top of my head, but I'd say it certainly has to do with being close to the heavens or deities.

Olympus is the tallest mountain in Greece, many places and other such things of importance bear it's name in reference. It was believed to the home of the gods.

In Japan the tallest mountain is Mount Fuji. The summit was considered to be sacred in ancient times and was forbidden to women until the 19th and 20th centuries of the Meiji era. The base of the mountain was used as a remote training area for the ancient samurai, a warrior tradition.

During the Inca Empire their scared sites of religious offerings and prayers were called 'huacas'. These sites were natural in residence, things like boulders, streams and mountains. (Machu Picchu)

Hope that helped,

Cheers!
